Director of Performance Nutrition

Position Description UCF Athletics at the University of Central Florida, an NCAA Division I institution and Big XII Conference member, is seeking applications for the position of Director of Performance Nutrition.
  • Position Type: Full time
  • Position Status: Exempt

Under the direction of the Deputy A.D., Knights Leadership Academy / SWA, the selected candidate is responsible for the administration, organization, and supervision of a progressive performance nutrition department and oversees meal operations / catering that supports the dietary and hydration needs of 16 NCAA Division I sports and 450+ student-athletes within UCF, Conference, and NCAA rules and regulations.
Responsibilities include, but are not limited to: 
  • Research of best practices/protocols in the operation of a full-service training table and multiple fueling stations located on/off campus, as well as oversight of the daily menu/catering available to constituents in terms of quantity and quality of food;
  • Research and collaboration with internal and campus entities in the continuing education and counsel of student-athletes on optimal nutrition and hydration practices to support health and performance;
  • Research and educate / counsel coaches / student-athletes regarding appropriate legal / NCAA compliant use of dietary supplements, herbal supplements, and performance-enhancing substances, to include regular evaluation of NCAA compliant products to be available / consumed by student-athletes, as well as the identification of restricted and banned substances in compliance with governing sport bodies (e.g. NCAA, WADA, US anti-doping agency);  
  • Collaboration with coaching staffs and sports performance coaches in the analysis of energy needs / utilization related to each sport and the development of individualized nutrition plans (including fueling stations) to assist student-athletes in achieving their dietary goals / objectives; 
  • Collaboration with sports medicine staff in medical nutrition therapy to assist with the management / treatment of medical conditions / diseases (sport and non-sport related);
  • Collaboration with sports performance and sports medicine staffs in the assessment and analytics related to body composition as a tool to track progress and re-evaluate nutrition interventions;
  • Collaboration with the sports medicine team in the education and in-patient / out-patient programming for medical and psychological conditions related to body image and eating disorders;   
  • Oversight of meal card program and reporting of meal frequency and attendance of student-athletes related to their nutritional needs; 
  • Relationship management with food providers and related vendors, ensuring that student-athletes are getting adequate nutritional ingredients / products (food, fluid, supplements) maximizing health and wellness, to include the development of a menu labeling system providing a complete nutritional analysis of each food item served; and
  • Oversight of the sports nutrition budget, including procurement and payment for all nutritional supplements, student support, and the stocking/inventory/organization/cleaning of fueling stations.
  • Due to the constituents it serves, position often requires work on evenings and weekends, in addition to potential travel as needed.
Minimum qualifications: Master's degree in an appropriate area of specialization and two (2) years appropriate experience; or a bachelor's degree in an appropriate area of specialization and four (4) years of appropriate experience. Accreditation as a Registered Dietitian (RD) through the Commission on Dietetic Registration and license / certification eligible in the State of Florida (ANSI-Conference for Food Protection) required.  Prefer minimum two (2) years nutrition experience working with sports teams and Board Certified Specialist in Sports Dietetics (CSSD).  Strong attention to detail and communication (written/verbal) skills also preferred. Job Description
An O2X On-Site Human Performance Specialist must be a self-starter who thrives in a fast-paced environment. The ideal candidate will be an expert in his or her field, knowledgeable and passionate about human performance and training, as well as have a data-driven understanding of all aspects of HP. The Human Performance Specialist will be one of the go-to people at O2X and is an integral part of helping our clients improve the physical, mental, and emotional health of their members.

O2X On-site Human Performance Specialists are placed within departments, agencies, and organizations to work full-time and provide specific support to members in their areas of expertise. The role requires daily interaction with tactical athletes and leadership to train, equip, and prepare the population for optimal performance in their jobs. This includes targeted resources within the specialists’ primary areas of focus, but also general performance guidance and coordination with the entire O2X network of industry-leading experts.

Key Responsibilities
• Enhance the readiness of all client agency members. Design, implement, document, and provide direct daily oversight of all human performance services utilizing O2X methodical approach for required level of peak and sustained performance and conditioning of client agency members
• Provide ongoing, objective feedback to the O2X team as well as client agency leadership
• Inspect, monitor, and evaluate information, work-related conditions, and health and wellness equipment
• Participate in periodic meetings with both the client and O2X to review the care provided to the tactical athlete and identify opportunities for improvement
• Serve as conduit between O2X and the client, access point to entire network or O2X personnel and resources
• Direct O2X Human Performance workshop graduates to help disseminate and educate health, fitness, and safety training for all department personnel
• Conduct research, testing, and analysis to make recommendations on if members are fit for duty or need additional assistance through a health care professional
• Assist with the preparation of short and long-term fiscal plans for human performance programs
• Submit input to improve process, efficiency, and impact to O2X Human Performance team as well as client agency
• Conduct and coordinate fitness evaluations and O2X Readiness Assessment to development individual programs specific to tactical athletes
• Develop physical preparedness programs and coordinated training continuum with a focus on increased performance, longevity, and productivity
• Organize human performance-based testing, evaluation, and integration into performance enhancement tools
• Provide recommendations on human performance initiatives and programs to the client
• Consistently conduct research and integration of data-driven understanding of human performance
• Provide detailed regular up-to-date reporting, key performance indicators, client metrics, and communication to O2X
• Utilize O2X’s proprietary Tactical Performance App efficiently and effectively to provide programs and information to the client, as well as end user feedback to O2X

• Minimum Bachelor’s Degree in related field
• Certifications required for practice in area of expertise (CSCS, ATC, RD, CPR/AED, etc)
• Demonstrable accumulated experience with individual athletes and groups of athletes at the levels of NCAA Division I, Olympic, professional, first responder, and/or SOF operators in the accompanying, respective setting (3+ years preferred)

The successful candidate will be expected to teach undergraduate courses and potentially graduate courses while demonstrating high quality course delivery and student learning and engagement. Minimum Qualifications
- Earned master’s degree (for an instructor) or doctorate, Ph.D. or equivalent (for a lecturer) in nutrition or a closely related discipline from an accredited academic institution by the start of the appointment.
- Registered dietitian nutritionist (RDN) credential from the Commission on Dietetic Registration.
Preferred Qualifications
- Earned doctorate, or its equivalent in nutrition or a closely related discipline from an accredited academic institution.
- Demonstrated teaching experience and effectiveness as the instructor of record at an institution of higher education in nutrition.
- Strong practice as an RDN, particularly in a clinical setting.
- Evidence of effective student mentoring.
