FCP At the Table – Appetizer introduces the concept of food and culinary nutrition expertise as the foundation of the “At the Table” learning series developed by Food & Culinary Professionals (FCP). The module explores how food and culinary expertise extends beyond basic cooking knowledge to encompass a broad range of competencies, ethical responsibilities, and professional standards that shape practice in nutrition and dietetics. Participants are encouraged to reflect on their current levels of competence, proficiency, and expertise across core culinary domains while identifying areas for continued professional growth.

Grounded in the FCP Core Competencies and the Scope and Standards of Practice for Registered Dietitian Nutritionists in Food and Culinary, the content highlights the diverse roles food and culinary nutrition professionals can play across the food system—from production to consumption. Emphasis is placed on evidence-based practice, ethical decision-making, cultural respect, and adherence to professional standards in an evolving food and nutrition landscape influenced by science, technology, regulation, and public trust.

Serving as an entry point to the larger “At the Table” series, this module positions lifelong learning, self-awareness, and ethical leadership as essential elements for strengthening professional impact, enhancing credibility, and ensuring a meaningful seat at the table in food and nutrition conversations.

Learning Objectives:

After completing this session, participants will be able to:

  • Recognize food and culinary competencies where they have already developed expertise.
  • Identify food and culinary competencies where further knowledge, skills, and expertise can be developed to enhance professional impact and success.
