Beth Leonberg, DHSc, is Associate Professor,emerita and former Director of Dietetics Education in the College of Nursing and Health Professions at Drexel University in Philadelphia, PA. Her background includes clinical practice, management and research. Leonberg was selected as a Fulbright Scholar to Uzbekistan in 2018. She spent five months teaching pediatric nutrition to medical students and healthcare professionals around the country. She has also taught pediatric nutrition throughout the Middle East, including in Lebanon, Jordan, Kuwait, Saudi Arabia, Bahrain, and Dubai. She recently spent a month in 2023 as a visiting faculty at Ualikhanov University in Kokshetau, Kazakhstan.
In addition to teaching, she is an author of the Academy of Nutrition and Dietetics’ Pocket Guide to Pediatric Nutrition Assessment, 3rd edition and two chapters in the popular textbook Nutrition through the Lifecycle. She served as founding Editor in Chief of the Academy's Pediatric Nutrition Care Manual from 2008-2014. She has been director of the Didactic program in Dietetics at Drexel since 2011 and successfully applied to found a demonstration program for the Accreditation Council of Nutrition and Dietetics’ Future Graduate education model. She also founded Director of the Human Lactation Certificate program in 2013 and directed it until 2019.
Leonberg is a registered dietitian nutritionist (RDN) and is licensed to practice in the state of Pennsylvania. She is a board-certified specialist in Pediatric Nutrition (CSP) and a fellow of the Academy of Nutrition and Dietetics (FAND). Her clinical work over the course of her career has focused on outpatient pediatric GI, Early Intervention, and most recently on NICU.
She is currently serving as the Academy representative to the International Confederation of Dietetic Associations, as member of the House of Delegates representing the Global Member Interest Group, and as Formula co-editor for the Pediatric Nutrition Practice Group. Past leadership experience includes being a commissioner on the Commission on Dietetic Registration (1994-1998), chair of the Pediatric Nutrition Practice Group (2001-2002), member of the Board of Directors (2003-2006), member of the Council on Future Practice (2008-2010) and ACEND site visitor/lead reviewer (2013-2019), and Chair of the Global Member Interest Group (2023-2024).
She has two grown children whom she adopted from Kazakhstan in 2005.
