Kate Aragon is currently a first-year graduate student in Saint Louis University studying Clinical Nutrition. She received her BS in Education and Human Sciences emphasized in Dietetic Practice from the University of Nebraska-Lincoln in May 2020 along with a minor in Child, Youth, and Family Studies. Now, she is furthering her education as a Dietetic Intern in the St. Louis area.
Originally from the Pacific Island of Guam, Kate is beginning her research regarding diversity and inclusion in the field of Nutrition and its application to other minority groups in the profession. She feels passionate about diversity, inclusivity, and equity in the profession and hopes that her findings in research can be used to supplement the move towards more diversity in Dietetics.
Kate enjoys to explore new countries, cities, and small towns and tie in different cultural cuisine in her own kitchen. When not out and about, Kate enjoys learning new recipes and cooking traditional Filipino dishes for friends and family.
