Recipe - Indian-Style Cucumber Dip

Rabiya Dharsi, RD, LDN writes: Enjoy this refreshing dip that highlights green mint and cucumbers. Serve it with veggies (to add even more green), whole wheat pita chips, or even over steak.

Makes 4 servings, about 1/4 cup each

Ingredients:

  • 1 cup plain nonfat Green yogurt
  • 1/2 cup cucumber, seeded and diced
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1-2 cloves garlic, minced
  • 3 tablespoons fresh mint, chopped
  • Salt and pepper to taste

Directions:

  1. Mix all ingredients together in a large bowl. Can be stored in an air-tight container for up to one week.
