Looking for new cookware

    I would love to hear from the culinary nutrition experts. Looking for new cookware (moving away completely from PTFE) and would love to hear your favorite brands and what cookware pots/pans you cannot live without. I'm having bad luck, outside of my cast iron cookware, on finding really high-quality (yet affordable) cooking equipment. Appreciate your feedback!!!

    I love my All Clad cookware, but it is heavy...and a bit expensive, but you can find it on sale occasionally. It lasts forever and holds up to my daily wear and tear. Also, nothing is better than my Le Creuset Dutch oven for soups and stews! It is also expensive but sturdy and holds up!

    I agree with Laura. I love my All Clad and Le Creuset Dutch oven. Though they are expensive, whether for home or recipe development/testing use, I think of them as investments, considering the years of use, the amount of time we spend cooking, quality of cooking, and the end result.

    Agree that all-clad is the way to go . I also have a Tramentino (sp?) sauté pan which is very good and preferred by many of my chef friends. Le Creuset or Staub for Dutch ovens.

    Hi All,  I also love my All-Clad but more recently purchased a 3-set of Greenpan Ceramic Non-stick frypans.  While they don't clean up as nicely, I do love the way they perform....and I like the commitment of the company to toxin-free cookware and sustainability.  Thanks, Sue

    Love my All Clad  - they do run sales - contact them directly. My Dutch oven is a Staub - grabbed it during a pop up sale at King Arthur's cooking school.

    I also purchased Made In nonstick pans that are made without PFOAs but it is a Teflon type coating.

    One consideration in how much you spend on cookware -  how careful are you (or family members) with pans and following instructions, no metal utensils, letting them cool before washing them, etc

    It seems Laura, Elizabeth and I love le Creuset and All Clad, mine have held up over many years and most importantly, cook evenly.

    For non-stick, I generally use my All Clad stainless steel saute or fry pans and just make sure the oil is hot and evenly spread to fill in miniature cracks and scratches to reduce sticking--this trick works for frittatas, eggs, fish etc. however, it takes practice/attention. 

    Another easier option (although it can mean less crispy edges and less maillard browning reactions), is to use parchment paper on stainless steel if your product has extra moisture like fish or defrosted salmon. Although, I usually pan sear salmon in its frozen state for better results than defrosted.

    For non-stick saute' pans however, I'm a fan of cast iron, particularly for fish and eggs. Seasoned properly, no stickage and extra iron--bonus!

    If I don't want a heavy pan, and want to make omelettes, crepes etc., I use my black carbon steel by Mauviel or my Blue Carbon Steel pan by du Buyer. I was introduced to these pans when training in France.  However, they do require some attention versus a non-PTFE non-stick pan.

    Agree - I've had All-clad pieces for 25 years.

    I would also say that Lodge dutch oven is good quality as well, and less expensive than Le Creuset. Their cast iron skillets are also good. 

    Calphalon is also an affordable option to All-clad.

    Hi Sarah,

    We are also trying to stay away from PTFE to SS and purchased a new set from Kohl's to try it out before we invest in higher quality items. We purchased it about 6 months ago so I can't talk on the longevity of it, but what I liked about it was that they are lightweight but still have the thick layer on the bottom for even heat distribution: https://www.kohls.com/product/prd-7103248/farberware-brilliance-10-pc-stainless-steel-cookware-set.jsp?prdPV=2

    I don't have good grip strength and the other SS pans I handled are way too heavy for me. I would recommend making sure you are comfortable with and able to handle them well before purchasing.

    Hi Sarah,

    I agree with what everyone has said about All-Clad and Le Creuset. They cost a lot up front but last forever. Hestan is also fantastic. And never get rid of your cast iron, it's perfect for so many things.

     

    I think one trap people fall into is buying a set of pans, which seems like a good deal per piece, but will you really use all the pieces? Matching is way less important than function. Spend money on what you will use daily. I would say spend more on a great 12" saute pan, and maybe one with high sides too.

     

    In my opinion, you can spend less on sauce pans. I love my All-Clad saucepans, but I also have a 40+ year old Farberware saucepan with a thick aluminum bottom that I use daily. Keep an eye out at garage sales, because people often don't realize what they have. I recently bought a nearly new Le Creuset baking dish for $20.
