Course 2: US Food Regulations - Promoting and Protecting Public Health

This session surveys U.S. food and nutrition laws that protect public health and shape consumer choices. It highlights milestones from early 1900s statutes through the Federal Food, Drug, and Cosmetic Act and explains how regulation works at local, state, and federal levels. Participants review roles of FDA, USDA, CDC, EPA, and FTC and cover food safety, labeling (nutrition, menu, allergens), supplements, additives, surveillance, FSMA, and career pathways for RDN/NDTRs.
