Key Takeaways: The study examined the prevalence of salad bars in the U.S. Elementary schools participating in the national school lunch programs, which were collected annually between 2006-2007 and 2012 and 2013. The study concluded that the prevalence of salad bars increased significantly after the U.S. Department of School Meal Guidelines. Schools with greater engagement with these specific programs and resources were likely to have salad bars.
