Latin American cuisine is often discussed as if it were a single culinary tradition, yet it represents a vast and diverse mosaic of regional foodways shaped by Indigenous, Spanish, African, and other immigrant influences from the Middle East and Asia. For dietitians working with multicultural populations—or those simply interested in global culinary traditions—understanding the cultural context of food is essential to meaningful nutrition conversations.

This presentation explores the rich culinary landscape of Latin America and the Hispanic diaspora in the United States, highlighting the distinct food traditions of major groups including Mexican, Caribbean Hispanic (Puerto Rican, Dominican, Cuban), Central American, and South American communities. Using the Breaking the Cultural Code framework developed by Lorena Drago, participants will examine how geography, migration, agricultural traditions, and cultural identity shape food choices, meal patterns, and cooking techniques.

Through examples of traditional ingredients, regional dishes, and evolving food trends, this session will demonstrate how culturally informed knowledge enhances culinary appreciation and strengthens culturally respectful nutrition communication. Participants will leave with practical strategies for recognizing culinary diversity within Latin American cultures and integrating this understanding into education, culinary programming, and food-focused initiatives.
