Join us for a behind-the-scenes look into how canned fruits and tomatoes are sustainably grown, harvested and go from field to can in under 8 hours. You will learn about the process from growers in the Central Valley, about the non-BPA cans and about what goes into the how and why of harvest. You will hear from plant managers, and from food safety experts - all of whom are participate in the farm-to-can process. Additionally, you will learn about the evidence-based reasons that support the consumption of canned fruits and tomatoes. Studies from Oregon State University and UC Davis will be shared that not only 'bust myths' about canned products, but these peer-reviewed studies might also inspire you to think about canned fruits and tomatoes differently. Picked at the peak of nutrient density and packed in their own juices, you will learn why these products are an attractive and affordable option for food as medicine applications.

- List and discuss how growing and production processes in California’s fields and orchards result in safe and nutritious canned fruits and tomatoes.
- Describe the field-to-can process utilized in California’s Central Valley.
- Confidently incorporate domestically-produced canned fruits and tomatoes into recipes and menus.
